Ingredients for 4
- 1 onion (finely chopped)
 - 2 tbsp vegetable oil
 - 2 cloves garlic (minced)
 - 1 tsp fresh ginger (minced)
 - 1 tsp turmeric (ground)
 - ½ tsp cumin (ground )
 - 1 pinch cinnamon
 - 1 large carrot (sliced)
 - 6 okras (cut into pieces)
 - 1 spring onion (chopped)
 - 1,5 green chili (chopped)
 - 1 can chickpeas
 - 400 g coconut milk
 - 150 ml water
 - 2-3 tbsp crunchy peanut butter
 - Coriander
 - Salt to taste
 
Method
- Fry the onions in oil on medium low heat for 5 minutes until gold brown.
 - Add garlic, ginger, chili, turmeric, ground coriander seeds, cinnamon, cumin and fry for 1 minute.
 - Add the coconut milk with peanut butter, chickpeas, carrots and okras and cook for 5 minutes.
 - Season with salt.
 - Serve with chopped coriander and rice.
