Winter has definitely taken over here in Austria. This also means that the selection of seasonal fruits and vegetables is significantly smaller than in Summer. Nevertheless, this does not imply that Winter meals need to be less creative or healthy than in Summer. Fresh carrots, beets, celery, apples and pears are great to work with but also grains are an optional base for a healthy diet. Correspondingly, the period of fasting is moving closer and closer and there are a lot of great options on how to use those veggies in your diet!
